Produced by two families who collectively farm 30 small fields of 1 - 8 hectares each, in the Tras-os-Montes region of northern Portugal.
Caixero was set up by two boyhood friends who, after time studying in Porto, both returned to their family homes with a passion to carry on the family traditions, to look after the land, and to combine it with their new business knowledge. Now they harvest enough produce to exist as a company and to guarantee that no fields are abandoned, unlike much of the rest of their region.
The 'Classic' oil comes in 5L bag-in-box. It is produced using organic methods (though is not yet certified, due to the costs of carrying out the certification). The olive varieties are Cobrançosa, Verdeal, and Madural. This oil has a nice spice and pleasant bitterness with aromas of dried fruit and tomato leaf.
